The Južnoslovenská wine region of Slovakia producing some of the most genuine wines. One winery that stands out in this area is Strekov 1075, led by the highly skilled winemaker Zsolt Sütő.
Zsolt is a pioneer of natural winemaking in Slovakia, being the first to explore skin maceration and maintain minimal sulfur levels in his wines. In the heart of the Strekov region hosts 11 hectares of vineyards by Strekov 1075. Zsolt Sütő converted his plots to sustainable farming. The region’s microclimate ensures a long optimal ripening season, as the temperature is moderated by the Danube river. The top layer of soil consists of clay-loam, which lies above the marine sediments, sandstone and limestone veins.
Zsolt cultivates his vines by hand and trains them mainly as bush vines in order to force their roots to go deeper, making them less sensitive to drought. This also allows him to naturally keep the yield extremely low at 25hl/ha. In the cellar the wines ferment spontaneously in barrels and open vat fermenters without any intervention. Zsolt prefers to keep the wines on their lees and to avoid the use of sulphur.
The philosophy states: “We want the person getting to know our wine to get pure, true information about us, about our outlook on life. When he drinks our wine, he should feel that we want to get to know him through our wine, but we don’t want to like each other at all costs.”
